Chili Garlic Black Bean
What you need
1 bunch scallion whites (whole bunch)
5-6 cloves garlic
1 tblspn (heaping) fermented black beans
1 tblspn (not heaping) salted chilis*
4 red jalapenos
3 thai peppers or 2 habaneros
1 (more like 1/2 or 2/3) tblspn rice vinegar
2 bunches scallion greens
(can replace one bunch with 1/2 or 1/3 bunch green garlic)
Peanut oil
1 tblspn Sesame oil
1 tblspn soy sauce
How to do it
Chop scallion whites into small rings, garlic in medium chunks (like sixths or eighths) and put in 1st bowl. Rinse black beans and put into that bowl. Put salted chilis into that bowl (*could probably leave this out if don't have it).
Chop jalapenos and thai peppers into rings and put into 2nd bowl (if using habaneros, chop those into small bits).
Chop green garlic and scallion green into rings, put in 3rd bowl.
Heat peanut oil on high heat until smoking. Fry bowl 1 (garlic, etc) and cook very briefly (like 15 seconds), add bowl 2 (peppers) and vinegar, cook maybe 15-30 more seconds. Add bowl 3 (green garlic and scallion greens). Cook until green garlic wilts, stirring constantly, about 30 seconds to 1 minute. Turn off heat. Pile everything in skillet. Add soy sauce and sesame oil, stir. Let sit for a little while.
